This light and fluffy dessert is the perfect way to finish a hearty meal.
They are easy to make and will have them coming back for more!
Served with ripe strawberries and chopped mint leaves.
Hot chocolate can be used in place of coffee

Ingredients:
1 x 250g packet of marshmallows
1 cup of fresh brewed coffee or hot chocolate (made with water, not milk)
300ml light thickened cream
1 punnet strawberries
Mint leaves
1 chocolate stick for decorating
Utensils:
Chopping board
Sharp knife
Small saucepan
Electric mixer
- Place cup of coffee in small saucepan
- Add marshmallows
- Stir over low heat until marshmallows are melted
- Place marshmallow mixture in fridge till starting to set like jelly (about 1 hour)
- Whip cream in a large bowl until thick
- Add the marshmallow mixture to the cream and continue to beat until jelly mixed through
- Place in serving bowls and refrigerate until set, preferably overnight
- Decorate with fresh strawberries and finely chopped mint leaves
- To be really decadent add a dollop of cream and sprinkle with grated dark chocolate!
